Funtastic Friday

Hello Friends! I have a great cookie recipe  for you today. It comes from the book
1 Dough, 100 CookiesThere are some very fun ideas in there.

1 cup butter, softened
Scant 3/4 cup superfine sugar 
1 egg yolk, lightly beaten
2 tsp vanilla extract
2 cups all-purpose
1/2 cup unsweetened cocoa powder
1/2 cup milk chocolate chips
1/2 cup white chocolate chips
4oz/115g bittersweet chocolate, coarsely chopped 

Pre heat the oven to 375. Line 2-3 cookie sheets with baking parchment.

Put the butter and sugar into a bowl and mix well with a wooden spoon, then beat in the egg yolk and vanilla extract. Sift together flour, unsweetened cocoa powder and a pinch of salt into the mixture. Add both kinds of chocolate chips and stir until thoroughly combined.

Make 12 balls of the mixture, put them on the prepared cookie sheets, spaced well apart and flatten slightly. Press the pieces of bittersweet chocolate into the cookies.

Bake for 12-15 minutes. Let cook on the cookies sheets for 5-10 minutes, then using a metal spatula, carefully transfer to wire racks to cool completely.


Now, let me tell you, I did not follow this to the tee.  I didn’t get the bittersweet chocolate and I used regular sugar. This recipe is rather specific about wooden spoons, metal spatulas, and parchment. Use what you have. 😉

I also over softened my butter to melty as my cookies where very crumbly. But my Mr put them in the freezer for who knows why and now they’re great!

Funtastic (Food) Friday

Here’s a great idea for a funtastic family dinner. Home made pizza! Pillsburry makes these awesome pre-made crust. You just add your family’s favorite  toppings. It’s an easy way to spend some family time and get the kids involved. Plus, if you have picky eaters you can appease them.

We crazy people really like sour cream pizza. Using sour cream instead of pizza sauce. Weird sounding, I know. But, my husband has made a point to try all strange combinations because they are usually very yummy. As a former server he’s heard quite a lot. Mustard on an omelet anyone?

A little (or a lot ;)) sour cream, dill weed, mozzarella cheese, and green olives.

The sour cream gives it a nice tangy flavor. I’ve also made this with black olives or pineapple.  You could also use some fresh veggies. Give it a try and let me know what you come up with!

Boy oh boy. I wasn’t sure what I was going to blog about today. My thought for “Funtastic Fridays” was to share great family fun and date night ideas. Well, I had a pretty fun date last night. Although do to a business meeting I started without my Mr.

Karaoke Night!

As an avid singer, it was kind of surprising that I had never been to a karaoke night. My voice is a little hoarse from all the hooting and hollering I did yesterday. =)

If you enjoy people, music, and fun than karaoke is for you. Even if you only sing along with your favorite tunes and don’t brave the mic yourself.

I will say that I enjoyed meeting my Mr at the joint. It was exciting anticipating him walking through the door and seeing how cute I looked for him. And, not that I’m that far past my teen years, but I felt like a teen again going out with my friends. 😉 Partially because my mom was our babysitter last night. And partly because the Mr was coming out later so I was graciously chauffeured by some good friends of ours.

There’s Patty and I getting our “Landslide” on!

All in all, it was probably the most fun and cheap date I’ve been on in a while! But, that all depends on how much you drink, tee hee.
